Vegetables with Wild Rice Blend
This wild rice blend dish can be used as a stand alone dish, or a side to compliment any meal!
Ingredients
2 cups carrots, sliced
2 cups yellow squash, sliced
2 cups zucchini, sliced
1 large onion, sliced and ringed
1-2 garlic cloves, minced
1 cup frozen corn
1 tomato, diced
½-1 cup cashews
1 Tbsp coconut oil
1 Tbsp Earth Balance natural buttery spread with Olive Oil
Sea salt and pepper to taste
Other vegetable seasonings, optional
Wild Rice Blend
2 cups Texmati® wild rice blend
3 cups water
2 tsp chicken broth or seasoning
2 tsp Earth Balance natural buttery spread with Olive Oil
Instructions
In a large frying pan, sauté all vegetables, except tomato, in coconut oil until desired softness. Add Earth Balance, diced tomato, and cashews to vegetable mix when they have 5 minutes left to cook.
Season with sea salt and pepper.
Serve over rice.
Wild Rice Blend
Combine all ingredients in a medium saucepan.
Bring to a boil; stir once. Cover with a tight fitting lid; reduce heat and simmer for 15 minutes. Remove from heat and let stand (covered) for 5-10 minutes.
