Vegan Sloppy Joes
A “Meatless Monday” option, textured vegetable protein (TVP) is a healthy recipe substitute for browned ground beef since it contains no fat, saturated fat or cholesterol.
Yield: Makes 4-6 servings
Ingredients
2 Tbsp olive oil
1 large onion, diced
1 medium green peppers, seeded and diced
1 ½ cups boiling water
2 ½ cups tomato sauce
1 Tbsp chili powder
1 Tbsp onion powder
1 tsp sea salt
3 Tbsp BBQ spice
1 Tbsp mustard
1 Tbsp Turbinado sugar
1 ½ cups dry TVP (textured vegetable protein)
Instructions
Sauté the onion and green pepper in oil until the onions are translucent.
Add the remaining ingredients and simmer for 20 minutes.
Serve on buns.
Dry TVP must be reconstituted in water before use: Plan on 1 cup of dry TVP yielding 2 cups of meat substitute after adding 1 cup of water.
Onions – Contain phyto-chemical compounds that protect from cancers, lower cholesterol, and help lower blood sugar levels in diabetics. Onions are also anti-inflammatory and anti-bacterial.
Green peppers – An incredible source of vitamin C, also contains Vitamins K and B6.
