Strawberry Avocado Spinach Salad
This is a delicious and very simple spinach salad with fresh strawberries, avocados, cucumbers and a sugar-free balsamic dressing.
Ingredients
Salad Ingredients:
6 cups fresh baby spinach
1 pint strawberries, hulled and sliced
1 cucumber, quartered, sliced
1 avocado, diced (or you can double this to 2 avocados!)
1/4 cup sliced almonds, toasted
half a small red onion, thinly sliced
Dressing Ingredients:
1/3 cup cold pressed olive oil (avocado or walnut oil works too)
2 Tablespoons balsamic vinegar
1 garlic clove, minced or pressed
¼ scant tsp ground mustard
1 Tablespoon lemon juice
Instructions
To Make The Balsamic Dressing:
Whisk all ingredients together until combined.
To Make The Salad:
Toss all ingredients together with your desired amount of dressing until combined.
