Spicy Black Bean Burgers
Add some spice to your black bean burgers! Serve on a whole grain bun with your choice of condiments. Suggestions: spinach or lettuce, tomato and onion slices, or avocado/tomato salsa.
Yield: 4-6 patties
Ingredients
2 cups canned black beans, drained and rinsed
1 small onion, finely chopped
1 large garlic clove, minced
1-2 Tbsp. jalapeño pepper, minced
½ cup frozen corn, thawed
1 egg white (have a second egg on hand if needed)
1 Tbsp. tomato paste
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. chili powder
1 tsp cumin
1/2 tsp. red pepper flakes
3-4 shakes of salt and pepper or to taste
½ cup breadcrumbs
Instructions
In a food processor, puree 1 ½ cups of the black beans. If you don’t have a food processor, you can just mash them with a potato masher or wooden spoon. Place pureed black beans in a large mixing bowl, add the remaining ½ cup of whole beans and set aside.
Mince onions, garlic, and jalapeño pepper; add to black beans. Add the corn and mix.
Whisk together the egg white, tomato paste and all of the spices. This will make a thick paste. Add this to the bean/corn mixture.
Finally, add the breadcrumbs to the mixture. Mix together thoroughly until ingredients are combined. Mixture may seem dry but it should come together with mixing. If needed, add a second egg white.
Form mixture into patties (4 large patties or 6 medium patties). Place patties on a baking sheet and bake in a 375° oven for 8-10 minutes, flip the burgers, then cook for an additional 8-10 minutes.
